- Sweet and Sour Sauce:
- 7 oz. of tomato paste
- 1 1/2 cups chicken bone broth
- 1/3 turn cup
- 1/4 cup of coconut vinegar
- One tablespoon lime juice
- 3/4 tablespoon of fish sauce
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/8 teaspoon ginger, freshly grated
- 1/4 teaspoon of guar gum (optional)
- 1 cup of coconut oil for frying
- Two large eggs
- 1 1/2 cups parmesan cheese powder
- 1/4 teaspoon black pepper
- 1 pound boneless and skinless chicken is needed thighs cut into bite-sized pieces
- Slices of scallions, to decorate
Take the sweet and sour sauce only 1/4 cup for the recipe
Make the paste of tomato. Take broth, sweetener, vinegar, lime juice, fish sauce, salt, garlic powder and ginger in a standard saucepan. Turn on the heat and keep it medium. Over medium heat, mix. Let it be boiling, stirring frequently. After 3 minutes, stirring sporadically, until it becomes thick as you want. Turn off the heat and let it be cool. Filter guar gum, if using, and beat until all mix together. Preserve the sauce into a bowl and refrigerate.
Chicken: take a 4 inches deep pot and heat the oil at 350 degrees. The oil must be one inch deep. Break the eggs and mix them with a fork beat them enough in a shallow pot. In other bowl mix the parmesan powder and pepper. Dunk a chicken nugget first in the eggs then in the cheese mixture. It must be covered well. Now fry the seeds for five minutes and make them golden brown. Make it sure they have been cooked. Mix fried chicken nuggets with the sauce. You may serve it over rice with cauliflower and garnish with spring onions, according to your wish.
